Our curated selection of Redbyrd ciders put together by cidermaker and orchardist, Eric Shatt. Released 3 times a year. These will be hand selected, thoughtfully presented with notes, pairing suggestions and guided tastings. Will include at times vertical offerings, library ciders, limited releases, both still and sparkling ciders…always what we are drinking here at the orchard. Members receive an additional 5% off all Redbyrd Orchard Cider purchases.

Cloudsplitter ’18 – Naturally Sparkling Extra Brut Cider. 100% Certified Biodynamic grown apples. Fermented and aged in stainless steel, bottled 7/30/19, disgorged in batches of 10 cases beginning August 2020. Notes of beeswax, red raspberry, mint, preserved lemon Apples: golden russet Roxbury russet brown snout, Baldwin, Kingston Black, Tompkins king, Dabinett, Wickson Crab, Goldrush, Stoke Red, karmijm de Sonneville, Harry Masters Jersey, Gnarled Chapman, Redbyrd Bitter, and more. 36 cases produced. 0.0% residual sugar, 9.5% alc/vol. Asters In Gold ’17– Naturally Sparkling Sec Cider. 100% unsprayed apples grown in finger lakes. Pressed autumn of 2018. Fermented and aged in stainless steel and oak barrel, bottled 11/01/18. Disgorged in 10 cases batches beginning August 2020. Notes of grilled peach, saffron, almond meringue.
